Ingredients

  • 500g boneless chicken breast, cut into bite-sized pieces
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons ketchup
  • 2 tablespoons sugar
  • 1 tablespoon chili paste
  • 1/4 cup pineapple juice
  • 1 tablespoon cornstarch
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken: Season chicken pieces with salt and pepper. In a bowl, mix cornstarch with a little water to create a slurry. Toss chicken in the cornstarch slurry until fully coated.
  2. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add chicken to the skillet and cook until golden brown and cooked through, about 6-8 minutes. Remove chicken from the skillet and set aside.
  3. Sauté Vegetables: In the same skillet, add the remaining tablespoon of oil. Add minced garlic and sliced onion, and sauté until fragrant. Add the sliced red, green, and yellow bell peppers and continue cooking until slightly tender.
  4. Make the Sauce: In a small bowl, combine soy sauce, rice vinegar, ketchup, sugar, chili paste, and pineapple juice. Stir well.
  5. Combine and Cook: Return the cooked chicken to the skillet with the vegetables. Pour the sweet and sour sauce over the chicken and vegetables. Stir well to coat everything evenly. Allow the mixture to simmer for 3-4 minutes until the sauce thickens.
  6. Final Touches: Adjust seasoning with additional salt, pepper, or sugar according to taste. Serve hot with steamed rice or noodles.

  • For extra crispiness, deep fry the chicken pieces instead of sautéing.
  • Adjust the level of spiciness by increasing or decreasing the amount of chili paste.
  • For a tangier flavor, add more rice vinegar.
