Description

Delicious homemade rosemary sea salt bagels with a chewy crust and flavorful toppings.

Ingredients

Scale
  • 3 ½ cups bread flour
  • 1 ¼ cups warm water
  • 1 packet active dry yeast (about 2 ¼ teaspoons)
  • 2 tablespoons granulated sugar
  • 1 tablespoon vegetable oil
  • 1 ½ teaspoons salt
  • 23 tablespoons fresh rosemary, chopped
  • Coarse sea salt (for topping)
  • 1 tablespoon baking soda (for boiling)
  • 1 egg wash (1 egg beaten with 1 tablespoon water)

Instructions

  1. Activate Yeast: In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. Make the Dough: In a large mixing bowl, combine bread flour and salt. Add the yeast mixture and vegetable oil to the flour. Mix until a dough forms, then knead for about 8-10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise for about 1 hour or until doubled in size.
  3. Shape the Bagels: Punch down the dough and divide it into 8 equal pieces. Shape each piece into a ball, then use your finger to poke a hole through the center. Stretch the hole to about 2 inches in diameter to form the bagels.
  4. Boil the Bagels: Preheat your oven to 425°F (220°C). Bring a large pot of water to a boil, then add baking soda. Boil the bagels in batches for about 1 minute on each side. Remove from water and place on a baking sheet lined with parchment paper.
  5. Add Toppings: Brush the boiled bagels with the egg wash. Sprinkle chopped rosemary and coarse sea salt on top.
  6. Bake the Bagels: Bake for 20-25 minutes or until golden brown. Remove from oven and let cool on a wire rack.

Notes

  • Ensure your water is warm, not hot, to avoid killing the yeast.
  • Knead the dough well to develop gluten for chewy bagels.
  • Boiling is essential to form the bagel crust, so don’t skip this step.
  • Experiment with additional toppings like sesame seeds or garlic for variety.
