- 2 sheets puff pastry
- 300g fresh spinach
- 150g feta cheese
- 100g cream cheese
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- salt, to taste
- black pepper, to taste
- 1 egg, beaten, for egg wash
- 1 small onion, finely chopped
- 2 tablespoons Parmesan cheese, grated
Instructions
- Prepare the Spinach Filling: Heat olive oil in a pan over medium heat. Sauté the onion until translucent, then add the minced garlic. Add the fresh spinach to the pan and cook until wilted. Remove from heat and allow to cool slightly. Add feta cheese, cream cheese, salt, and pepper to the spinach mixture. Stir until well combined.
- Prepare the Pastry: Preheat your oven to 200°C (392°F). Roll out the puff pastry sheets on a lightly floured surface to smooth out any creases. Divide the filling evenly between the two sheets, placing it on one half of each sheet. Sprinkle grated Parmesan cheese over the filling for extra flavor.
- Form the Pastries: Fold the pastry over the filling to create a sealed pocket. Crimp the edges with a fork to ensure they are sealed. Transfer the pastries to a baking sheet lined with parchment paper.
- Apply Egg Wash: Brush the top of each pastry with beaten egg to achieve a golden color when baked.
- Bake: Place the baking sheet in the preheated oven. Bake for 20-25 minutes or until the pastry is golden brown and puffed. Remove from the oven and let cool for a few minutes before serving.
Notes
- Make sure the spinach is well-drained to prevent the pastry from becoming soggy.
- You can add a pinch of nutmeg to the filling for an additional layer of flavor.
- If you prefer a stronger cheese flavor, substitute half of the feta with ricotta or goat cheese.
