This Decadent Chocolate Mousse Cake features rich chocolate flavor with a light mousse topping, perfect for any special occasion.

- 200g dark chocolate, chopped
- 100g unsalted butter
- 2 cups (480ml) heavy cream
- 4 large eggs, separated
- 1 cup (200g) granulated sugar
- 1 tsp vanilla extract
- 1 cup (125g) all-purpose flour
- 1 tsp baking powder
- 2 tbsp cocoa powder, for dusting

Instructions
- Prepare the Cake Base:
- Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
- Melt the dark chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth and set aside to cool slightly.
- In a medium bowl, whisk egg yolks with half the sugar until pale and creamy.
- Fold in the cooled chocolate mixture, vanilla extract, and salt.
- In another bowl, sift together flour and baking powder. Gradually fold into the chocolate mixture.
- Bake the Cake:
- In a clean bowl, whisk egg whites until soft peaks form. Gradually add the remaining sugar and continue whisking until stiff peaks form.
- Gently fold the egg whites into the cake batter.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely in the pan.
- Prepare the Chocolate Mousse:
- Heat 1 cup of heavy cream in a saucepan until hot, but not boiling.
- Pour the hot cream over the chopped chocolate and let sit for a minute, then stir until smooth.
- Allow to cool to room temperature.
- Whip the remaining heavy cream to soft peaks and gently fold into the chocolate mixture until well combined and smooth.
- Assemble the Cake:
- Remove the cooled cake from the pan and place it on a serving plate.
- Spread the chocolate mousse evenly over the cake layer.
- Chill in the refrigerator for at least 3-4 hours or until the mousse layer is set.
- Garnish and Serve:
- Dust cocoa powder over the top.
- Decorate with chocolate shavings or curls.
- Slice and serve.
