Description

Ingredients

  • 200g dark chocolate, chopped
  • 100g unsalted butter
  • 2 cups (480ml) heavy cream
  • 4 large eggs, separated
  • 1 cup (200g) granulated sugar
  • 1 tsp vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1 tsp baking powder
  • 2 tbsp cocoa powder, for dusting

Instructions

  1. Prepare the Cake Base:
    • Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
    • Melt the dark chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth and set aside to cool slightly.
    • In a medium bowl, whisk egg yolks with half the sugar until pale and creamy.
    • Fold in the cooled chocolate mixture, vanilla extract, and salt.
    • In another bowl, sift together flour and baking powder. Gradually fold into the chocolate mixture.
  2. Bake the Cake:
    • In a clean bowl, whisk egg whites until soft peaks form. Gradually add the remaining sugar and continue whisking until stiff peaks form.
    • Gently fold the egg whites into the cake batter.
    • Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
    • Allow the cake to cool completely in the pan.
  3. Prepare the Chocolate Mousse:
    • Heat 1 cup of heavy cream in a saucepan until hot, but not boiling.
    • Pour the hot cream over the chopped chocolate and let sit for a minute, then stir until smooth.
    • Allow to cool to room temperature.
    • Whip the remaining heavy cream to soft peaks and gently fold into the chocolate mixture until well combined and smooth.
  4. Assemble the Cake:
    • Remove the cooled cake from the pan and place it on a serving plate.
    • Spread the chocolate mousse evenly over the cake layer.
    • Chill in the refrigerator for at least 3-4 hours or until the mousse layer is set.
  5. Garnish and Serve:
    • Dust cocoa powder over the top.
    • Decorate with chocolate shavings or curls.
    • Slice and serve.
