Description

A delightful chocolate swiss roll filled with whipped cream and fresh blueberries, perfect for any occasion.

Ingredients

Scale
  • 1/2 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs
  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 cup fresh blueberries
  • Additional blueberries for garnish
  • Whipped cream for decorating

Instructions

  1. Preheat and Prepare:
Preheat your oven to 350°F (175°C). Line a 10×15 inch jelly roll pan with parchment paper and lightly grease it.

  2. Mix Dry Ingredients:
In a bowl, sift together the flour, cocoa powder, baking powder, and salt. Set aside.

  3. Prepare Wet Ingredients:
In a large bowl, beat the eggs and sugar together using an electric mixer on high speed until the mixture is thick and pale, about 5 minutes. Mix in the vanilla extract.

  4. Combine Mixtures:
Gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.

  5. Bake:
Pour the batter into the prepared pan, spreading it evenly. Bake for 10-12 minutes or until the cake springs back when lightly touched.

  6. Roll the Cake:
While the cake is still warm, carefully roll it up in the parchment paper starting from a short edge. Let it cool completely.

  7. Make the Filling:
In a chilled bowl, beat the heavy cream and powdered sugar until stiff peaks form. Gently fold in the fresh blueberries.

  8. Assemble the Swiss Roll:
Unroll the cooled cake and spread the whipped cream mixture over it evenly. Roll the cake back up, peeling away the parchment paper as you go.

  9. Decorate:
Place the roll seam side down on a serving platter. Pipe whipped cream on top and garnish with fresh blueberries.

Notes

  • Ensure that the eggs are at room temperature to achieve better volume when beaten.
  • Be gentle when folding in the dry ingredients to maintain the airy texture of the batter.
  • Rolling the cake while warm prevents cracking.
  • Chill the Swiss roll in the refrigerator for at least an hour before serving for cleaner slices.
