Description
A classic British side dish, perfect for serving with roast beef.

- 1 cup all-purpose flour
- 4 large eggs
- 1 cup whole milk
- 1/2 teaspoon salt
- 12 teaspoons beef drippings or vegetable oil
Instructions
- Preheat your oven to 450°F (230°C) and place a muffin tin inside to heat up.
- In a mixing bowl, whisk flour and salt.
- In a separate bowl, beat eggs until frothy, then slowly whisk in milk.
- Combine wet and dry ingredients into a smooth batter. Let it rest for 30–60 minutes at room temperature.
- Once the oven is ready, carefully remove the muffin tin and add 1 teaspoon of fat to each cup. Return tin to oven until fat is smoking hot (about 5 minutes).
- Quickly pour batter into each cup, filling halfway.
- Bake for 20–25 minutes without opening the oven. They should be puffed and golden brown.
- Serve immediately while hot and crispy.
Notes
- Resting the batter helps achieve a better rise.
- Make sure the fat is hot before adding the batter.
