Description

A classic British side dish, perfect for serving with roast beef.


Ingredients

  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 teaspoon salt
  • 12 teaspoons beef drippings or vegetable oil

Instructions

  1. Preheat your oven to 450°F (230°C) and place a muffin tin inside to heat up.
  2. In a mixing bowl, whisk flour and salt.
  3. In a separate bowl, beat eggs until frothy, then slowly whisk in milk.
  4. Combine wet and dry ingredients into a smooth batter. Let it rest for 30–60 minutes at room temperature.
  5. Once the oven is ready, carefully remove the muffin tin and add 1 teaspoon of fat to each cup. Return tin to oven until fat is smoking hot (about 5 minutes).
  6. Quickly pour batter into each cup, filling halfway.
  7. Bake for 20–25 minutes without opening the oven. They should be puffed and golden brown.
  8. Serve immediately while hot and crispy.

Notes

  • Resting the batter helps achieve a better rise.
  • Make sure the fat is hot before adding the batter.
