- 3 medium fresh oranges
- 1 medium fennel bulb
- 1 small red onion
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh parsley (chopped)
Instructions
- Peel and segment the oranges, ensuring all bitter pith is removed.
- Trim the fennel bulb and slice it thinly using a mandoline.
- Thinly slice the red onion into rings; soak in cold water briefly to mellow the flavor if desired.
- In a large bowl, combine oranges, fennel, and red onion. Drizzle with olive oil, adding salt and pepper to taste.
- Sprinkle chopped parsley on top and toss gently to combine.
- Serve immediately for the best flavor.
