Description

Delight in the light and fluffy Vanilla Cream Strawberry Cake, topped with fresh strawberries and creamy vanilla frosting!

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 cups heavy cream
  • ½ cup powdered sugar
  • 1 tablespoon vanilla extract
  • Fresh strawberries (about 10-12 medium)
  • Powdered sugar for dusting
  • 1 tablespoon cornstarch (optional, for a thicker cream)
  • 1 tablespoon lemon juice (optional, for strawberry gloss)

Instructions

  1. Prepare the Cake: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan. In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. In another bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the creamed mixture alternately with milk, starting and ending with the dry ingredients. Pour the batter into the prepared pan. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
  2. Make the Vanilla Cream: In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. If a thicker cream is desired, mix cornstarch with a tablespoon of cold water and fold it into the whipped cream.
  3. Assemble the Cake: Once the cake has cooled, spread a thick layer of the vanilla cream on top. Arrange the strawberries on the cream, gently pressing them into the surface. Dust the strawberries with powdered sugar for an extra touch of sweetness and visual appeal.
  4. Serve: Chill the cake in the refrigerator for at least an hour before serving to set the cream. Slice and serve the cake with additional fresh strawberries if desired.

Notes

  • For a glossy finish on the strawberries, brush them with a mixture of lemon juice and powdered sugar.
  • Ensure the cake is completely cool before adding the cream to prevent melting.
  • You can substitute the heavy cream with a dairy-free alternative if necessary.
  • To enhance the vanilla flavor, consider using a vanilla bean instead of extract.
