- 1 pound chicken breast
- 1 cup orzo pasta
- 1 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook until browned and cooked through, about 6-7 minutes per side. Remove from the skillet and set aside.
- Add minced garlic to the same skillet and sauté for 1 minute until fragrant.
- Add in the orzo and chicken broth; bring to a boil. Reduce heat and let it simmer, stirring occasionally, until the orzo is cooked, about 10-12 minutes.
- Add in the sun-dried tomatoes, spinach, and heavy cream. Cook until the spinach wilts, about 2-3 minutes.
- Return the chicken to the skillet along with the Parmesan cheese, stirring until well combined. Season with salt and pepper to taste.
- Serve hot, garnished with fresh basil if desired.
Notes
- This dish can be customized by adding other vegetables like bell peppers or zucchini.
- For added flavor, consider seasoning the chicken with herbs before cooking.
