Description

Delicious cookies made with oats, strawberries, and a mix of chocolate for a sweet treat.


Ingredients

Scale
  • 3/4 cup All-purpose flour
  • 1 cup Oats (Old fashioned)
  • 3 tbsp Coconut (Shredded)
  • 1 tsp Baking soda
  • 1/4 cup Brown sugar
  • 1 Egg (Large)
  • 1/2 cup Coconut oil (Melted)
  • 1/2 cup Honey (Or maple syrup)
  • 1 tsp Vanilla extract
  • 1/4 cup White chocolate chips
  • 1/4 cup Semisweet chocolate chips
  • 3/4 cup Fresh strawberries (Cut into small 1 inch cubes, Patted dry with paper towels)
  • 3 tbsp Walnuts (Roughly chopped)

Instructions

  1. In a mixing bowl, whisk together the flour, oats, coconut, baking soda and brown sugar.
  2. Add egg, coconut oil, honey, vanilla extract and mix until just combined.
  3. Stir in white chocolate chips, semisweet chocolate chips, strawberries and walnuts.
  4. Scoop out small portions of the dough and roll into balls. Place them on a cookie tray, lined with parchment paper.
  5. Bake at 350 degrees F for 12-14 minutes or until cookies are golden brown along the edges.
  6. Allow the cookies to cool down completely. Then, dig in and enjoy!

Notes

  • For best results, make sure the strawberries are patted dry to avoid excess moisture in the dough.
  • If desired, you can substitute honey with maple syrup for a different flavor.
