Description
Delicious cookies made with oats, strawberries, and a mix of chocolate for a sweet treat.
Ingredients

- 3/4 cup All-purpose flour
- 1 cup Oats (Old fashioned)
- 3 tbsp Coconut (Shredded)
- 1 tsp Baking soda
- 1/4 cup Brown sugar
- 1 Egg (Large)
- 1/2 cup Coconut oil (Melted)
- 1/2 cup Honey (Or maple syrup)
- 1 tsp Vanilla extract
- 1/4 cup White chocolate chips
- 1/4 cup Semisweet chocolate chips
- 3/4 cup Fresh strawberries (Cut into small 1 inch cubes, Patted dry with paper towels)
- 3 tbsp Walnuts (Roughly chopped)
Instructions
- In a mixing bowl, whisk together the flour, oats, coconut, baking soda and brown sugar.
- Add egg, coconut oil, honey, vanilla extract and mix until just combined.
- Stir in white chocolate chips, semisweet chocolate chips, strawberries and walnuts.
- Scoop out small portions of the dough and roll into balls. Place them on a cookie tray, lined with parchment paper.
- Bake at 350 degrees F for 12-14 minutes or until cookies are golden brown along the edges.
- Allow the cookies to cool down completely. Then, dig in and enjoy!
Notes
- For best results, make sure the strawberries are patted dry to avoid excess moisture in the dough.
- If desired, you can substitute honey with maple syrup for a different flavor.
