  • 1 teaspoon mustard seeds
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil

Instructions

  1. Prepare the Ingredients: Dice the fresh pineapple and finely chop the onion, garlic, and chili peppers.
  2. Cook the Aromatics: In a large saucepan, heat the vegetable oil over medium heat. Add the mustard seeds and cook until they start to pop. Add the chopped onion, garlic, and chili peppers. Sauté until the onion becomes translucent.
  3. Add Spices: Stir in the grated ginger, ground cumin, turmeric, and salt. Cook for another 1-2 minutes until the spices are fragrant.
  4. Simmer the Chutney: Add the diced pineapple, sugar, and apple cider vinegar to the pan. Mix well and bring the mixture to a gentle boil.
  5. Thicken the Chutney: Reduce the heat to low and let the chutney simmer uncovered for about 30-40 minutes, stirring occasionally. The chutney should thicken and the flavors should meld together.
  6. Cool and Store: Once cooked, allow the chutney to cool before transferring it to a sterilized jar. Seal tightly and refrigerate.
