Delicious brown sugar cookies that are soft and slightly chewy with a hint of spices.

- 1 cup dark brown sugar (packed)
- ¾ cup unsalted butter (at room temperature)
- 1 large egg
- 2 teaspoons vanilla extract
- 2 ¼ cups all purpose flour (properly measured)
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground ginger
- ½ teaspoon kosher salt
- ⅓ cup granulated sugar (for rolling)
Instructions
- Preheat oven to 350 degrees F. Line baking sheets with parchment paper. Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, add brown sugar, butter, egg, and vanilla. Beat until well combined.
- Add flour, baking soda, cinnamon, ginger, and salt. Mix until just combined.
- Scoop dough into 1 ½ tablespoon-sized portions (medium cookie scoop) and roll into balls.
- Pour sugar into a shallow bowl. Roll each dough ball into the sugar to coat all sides.
- Place on the prepared baking sheets, leaving about 2 inches between each one.
- Bake for about 8-15 minutes or until lightly golden brown around the edges. The edges should be set with slightly underbaked middles.
