Instructions

  1. Prepare the Chicken: Start by placing the boneless skinless chicken breasts in your cooking vessel of choice. For the Instant Pot, add chicken stock and cream of chicken soup to keep the chicken moist.
  2. Cook: For Instant Pot: Seal the pot and set it to cook on high pressure for 10 minutes. For Slow Cooker: Cover and cook on low for 4 hours. If using Stovetop: Warm the soup and stock in a skillet over medium heat.
  3. Shred the Chicken: After the cooking time is up, perform a manual release for the Instant Pot or check the chicken for doneness in the slow cooker. Shred the chicken using two forks directly in the pot or skillet until it’s tender.
  4. Mix in Ingredients: Stir in the crushed Ritz crackers and dried parsley, along with garlic powder and black pepper. Add a splash of chicken stock if your mixture is too thick.
  5. Let it Rest: Allow the filling to sit for about 20 minutes.
  6. Assemble the Sandwiches: Scoop the mixture onto soft buns. Serve warm.
