Description
Delicious savory corn fritters served with a creamy sauce, perfect for any occasion.
Ingredients
Scale
- 2 cups fresh corn kernels (or canned, drained)
- 1 cup all-purpose flour
- 2 large eggs
- 1/2 cup milk
- 1/4 cup chopped green onions
- 1 teaspoon baking powder
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese (optional)
- 1/4 teaspoon paprika
- 2 tablespoons olive oil (for frying)
- Green onions for garnish
- 1/2 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Prepare the Batter: In a mixing bowl, combine corn kernels, flour, baking powder, green onions, salt, pepper, and paprika. In a separate bowl, beat the eggs and milk together. Gradually add the wet mixture to the dry ingredients, stirring until just combined. Fold in the cheddar cheese (if using).
- Cooking the Fritters: Heat olive oil in a large skillet over medium heat. Spoon about 1/4 cup of the batter per fritter into the skillet, flattening slightly with the back of the spoon. Cook 3-4 minutes on each side, or until golden brown and cooked through. Remove from skillet and place on a paper towel-lined plate to drain excess oil.
- For the Sauce: In a small bowl, whisk together mayonnaise, sour cream, lemon juice, garlic powder, salt, and pepper until smooth and well combined.
Notes
- Ensure the skillet is not overcrowded while frying to achieve even cooking.
- Adjust seasoning based on preference, adding more spices or herbs as desired.
- For a spicier kick, add finely chopped jalapeños or a pinch of cayenne pepper to the batter.
