Description

Delicious savory corn fritters served with a creamy sauce, perfect for any occasion.

Ingredients

Scale
  • 2 cups fresh corn kernels (or canned, drained)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup chopped green onions
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/4 teaspoon paprika
  • 2 tablespoons olive oil (for frying)
  • Green onions for garnish
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Prepare the Batter: In a mixing bowl, combine corn kernels, flour, baking powder, green onions, salt, pepper, and paprika. In a separate bowl, beat the eggs and milk together. Gradually add the wet mixture to the dry ingredients, stirring until just combined. Fold in the cheddar cheese (if using).
  2. Cooking the Fritters: Heat olive oil in a large skillet over medium heat. Spoon about 1/4 cup of the batter per fritter into the skillet, flattening slightly with the back of the spoon. Cook 3-4 minutes on each side, or until golden brown and cooked through. Remove from skillet and place on a paper towel-lined plate to drain excess oil.
  3. For the Sauce: In a small bowl, whisk together mayonnaise, sour cream, lemon juice, garlic powder, salt, and pepper until smooth and well combined.

Notes

  • Ensure the skillet is not overcrowded while frying to achieve even cooking.
  • Adjust seasoning based on preference, adding more spices or herbs as desired.
  • For a spicier kick, add finely chopped jalapeños or a pinch of cayenne pepper to the batter.
