Description

Delicious salmon fillets stuffed with a creamy spinach and cheese mixture.


Ingredients

Scale
  • 2 (6 oz) salmon fillets
  • 2 cups fresh spinach, chopped
  • ½ cup cream cheese, softened
  • ½ cup grated Parmesan cheese
  • 2 tsp blackening seasoning
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper.
  2. In a bowl, mix chopped spinach, cream cheese, and Parmesan until creamy.
  3. Pat salmon dry and rub blackening seasoning generously on both sides.
  4. Create pockets in each fillet by slicing along the side and stuff them with the spinach mixture.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Sear each stuffed salmon for about 3 minutes on each side until golden brown.
  6. Transfer the skillet to the oven and bake for 10 minutes or until the salmon flakes easily with a fork.

Notes

  • Feel free to adjust the seasoning to your taste.
  • For a richer flavor, you can add garlic to the spinach mixture.
