Delicious salted caramel cheesecake bars with a graham cracker crust and rich filling.

- 1 cup granulated sugar
- 1/4 cup heavy cream
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter (melted)
- 1/4 cup brown sugar
- 1 cup salted caramel sauce (store-bought or homemade)
- 1/2 tsp sea salt (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 325°F (163°C).
- Prepare the Crust: In a bowl, mix graham cracker crumbs, melted butter, and brown sugar until well combined. Press the mixture firmly into the bottom of a lined 9×9 inch baking pan. Bake in the preheated oven for 10 minutes, then set aside to cool.
- Prepare the Cheesecake Filling: In a large bowl, beat the softened cream cheese until smooth. Add granulated sugar and mix until fully incorporated. Mix in the heavy cream, then add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Assemble and Bake: Pour half of the cheesecake batter over the cooled crust. Drizzle some salted caramel sauce over the batter. Pour the remaining cheesecake batter, spreading it evenly. Bake for 35-40 minutes or until the center is set and slightly jiggly. Allow to cool at room temperature, then refrigerate for at least 4 hours or overnight.
- Add Caramel Topping: Once thoroughly chilled, drizzle the remaining salted caramel sauce over the top. Sprinkle with sea salt for garnish.

- For a smoother texture, ensure all ingredients are at room temperature before mixing.
- To create homemade salted caramel sauce, melt sugar in a saucepan until golden brown, gradually add butter and then cream, stirring constantly. Season with salt to taste.
