Instructions

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • In a bowl, mix the graham cracker crumbs with melted butter until the mixture resembles wet sand.
    • Press the mixture firmly into the bottom of a 9-inch springform pan.
    • Bake for 10 minutes and let it cool completely.
  2. Make the Raspberry Puree:

    • Whip the heavy cream in a separate bowl until soft peaks form, then fold into the raspberry mixture gently.
  5. Assemble the Cheesecake:
    • Pour the raspberry mousse over the cooled crust and smooth the top with a spatula.
    • Refrigerate for at least 4 hours or until set.
  6. Garnish:
    • Before serving, top with fresh raspberries and optional glaze.
    • Dust with powdered sugar and add mint leaves for a fresh touch.
