Instructions
- Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the graham cracker crumbs with melted butter until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Bake for 10 minutes and let it cool completely.
- Make the Raspberry Puree:
- In a saucepan over medium heat, combine raspberries, sugar, and lemon juice.
- Cook until the raspberries break down, stirring frequently.
- Strain the mixture through a fine mesh sieve to remove seeds.
- Set aside to cool.
- Prepare the Gelatin:
- In a small bowl, sprinkle gelatin over ¼ cup of water. Let it bloom for 5 minutes.
- Heat gently until gelatin dissolves completely, then mix into the raspberry puree.
- Make the Mousse:
- In a large mixing bowl, beat cream cheese until smooth.
- Add raspberry puree and vanilla extract, and mix until well combined.
- Whip the heavy cream in a separate bowl until soft peaks form, then fold into the raspberry mixture gently.
- Assemble the Cheesecake:
- Pour the raspberry mousse over the cooled crust and smooth the top with a spatula.
- Refrigerate for at least 4 hours or until set.
- Garnish:
- Before serving, top with fresh raspberries and optional glaze.
- Dust with powdered sugar and add mint leaves for a fresh touch.

- For a firmer mousse, increase gelatin by a teaspoon.
- Use a chilled bowl and beaters for whipping the cream to get better peaks.
