Description
A deliciously rich dessert featuring a graham cracker crust and a creamy raspberry filling.
Ingredients
Scale
- 1 ½ cups graham cracker crumbs
- ¼ cup unsalted butter, melted
- 2 tablespoons sugar
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 ½ cups fresh raspberries
- 1 cup fresh raspberries (for topping)
- ½ cup raspberry jam
- Whipped cream (optional)
Instructions
- Prepare the Crust: Mix graham cracker crumbs with melted butter and sugar in a bowl. Press the mixture into the bottom of a springform pan. Refrigerate while preparing the filling.
- Make the Filling: Beat the cream cheese in a large bowl until smooth. Add powdered sugar and vanilla extract; mix until blended. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream and raspberries into the cream cheese mixture. Spread the filling evenly over the prepared crust.
- Add the Topping: Spread raspberry jam over the cream cheese filling. Arrange fresh raspberries on top. Optionally, add whipped cream for decoration.
- Chill: Refrigerate for at least 4 hours or overnight for best results.
Notes
- Ensure the cream cheese is fully softened to avoid lumps in the filling.
- For a firmer crust, bake at 350°F (175°C) for 10 minutes before adding filling.
- Garnish with mint leaves for a fresh touch.
