Description

Delicious pumpkin cookies topped with creamy cream cheese frosting, perfect for fall!


Ingredients

  • 1 teaspoon baking powder

  • 1 tablespoon pumpkin pie spice
  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • ½ cup light brown sugar (packed)
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ½ cup canned pumpkin puree (drained on paper towels)
  • 4 ounces cream cheese (softened to room temperature)
  • 4 tablespoons unsalted butter (softened to room temperature)
  • 2 cups powdered sugar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 350°F (180°C) and line baking sheets with parchment paper or silicone baking mats.
  2. Drain pumpkin puree on paper towels for a few minutes to remove excess moisture.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin spice.
  4. In a large mixing bowl, beat butter, granulated sugar, and brown sugar until light and creamy. Add the egg and vanilla extract, and beat until combined.
  5. Add pumpkin puree and mix until incorporated.
  6. Gradually add dry ingredients to the wet ingredients, mixing on low speed until just combined.
  7. Drop about 1 ½ tablespoons of dough per cookie onto prepared baking sheets, spacing 2 inches apart.
  8. Bake for 10-12 minutes or until set. Transfer cookies to a wire rack to cool completely.
  9. To make the frosting, beat cream cheese and butter together until smooth and creamy. Gradually mix in powdered sugar, then add vanilla extract. Beat until smooth.
  10. Frost cooled cookies with cream cheese frosting.
