Description
These pesto roasted potatoes are an easy and delicious side dish that adds flavor to any meal.
Ingredients

- 5 Russet potatoes
- 1 jar pesto sauce (10 ounce)
- ¾ cup parmesan cheese
Instructions
- Preheat oven to 450℉.
- Scrub (but don’t peel) potatoes and cut into large cubes.
- Place cut potatoes in a large Ziploc bag.
- Add pesto sauce to the bag and shake until all of the potatoes are coated.
- Pour contents out into a baking sheet and spread out evenly. Sprinkle on Parmesan cheese.
- Bake for 25-30 minutes, or until potatoes are golden.
Notes
- For extra crispiness, you can increase the oven temperature to 475℉ for the last 5 minutes of baking.
