Pesto Roasted Potatoes

Description

These pesto roasted potatoes are an easy and delicious side dish that adds flavor to any meal.


Ingredients

Scale
  • 5 Russet potatoes
  • 1 jar pesto sauce (10 ounce)
  • ¾ cup parmesan cheese

Instructions

  1. Preheat oven to 450℉.
  2. Scrub (but don’t peel) potatoes and cut into large cubes.
  3. Place cut potatoes in a large Ziploc bag.
  4. Add pesto sauce to the bag and shake until all of the potatoes are coated.
  5. Pour contents out into a baking sheet and spread out evenly. Sprinkle on Parmesan cheese.
  6. Bake for 25-30 minutes, or until potatoes are golden.

Notes

  • For extra crispiness, you can increase the oven temperature to 475℉ for the last 5 minutes of baking.
