Description

Ingredients

  • ½ cup unsalted butter (softened)
  • 1 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 3 cups powdered sugar
  • 1 pound dark chocolate chips
  • ½ cup milk chocolate chips

Instructions

  1. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and peanut butter.
  2. Add the vanilla extract, salt, and powdered sugar, and beat to combine.
  3. Roll the dough mixture into 1-inch balls.
  4. Place the balls on a cookie sheet or chopping board lined with parchment paper.
  5. Freeze for 30 minutes.
  6. Add the dark chocolate chips to a microwave-safe bowl.
  7. Microwave on high in 30-second intervals, stirring between each interval, until the chocolate has melted.
  8. Remove the balls from the freezer.
  9. Dip each ball into melted chocolate.
  10. Add the milk chocolate chips to another microwave-safe bowl.
  11. Microwave on high in 30-second intervals, stirring between each interval, until the chocolate has melted.
  12. Drizzle the truffles with melted milk chocolate.
  13. Refrigerate for a minimum of one hour before serving.
