Delicious chocolate-covered peanut butter truffles that are easy to make and perfect for any occasion.

- ½ cup unsalted butter (softened)
- 1 cup creamy peanut butter
- 1 tsp vanilla extract
- 1 pinch salt
- 3 cups powdered sugar
- 1 pound dark chocolate chips
- ½ cup milk chocolate chips
Instructions
- In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and peanut butter.
- Add the vanilla extract, salt, and powdered sugar, and beat to combine.
- Roll the dough mixture into 1-inch balls.
- Place the balls on a cookie sheet or chopping board lined with parchment paper.
- Freeze for 30 minutes.
- Add the dark chocolate chips to a microwave-safe bowl.
- Microwave on high in 30-second intervals, stirring between each interval, until the chocolate has melted.
- Remove the balls from the freezer.
- Dip each ball into melted chocolate.
- Add the milk chocolate chips to another microwave-safe bowl.
- Microwave on high in 30-second intervals, stirring between each interval, until the chocolate has melted.
- Drizzle the truffles with melted milk chocolate.
- Refrigerate for a minimum of one hour before serving.

- For best results, use high-quality chocolate.
- Store truffles in an airtight container in the refrigerator.
