- 1 lb Ground Beef (lean)
- 1 medium Onion (chopped)
- 3 cloves Garlic (minced)
- 14 oz Diced Tomatoes (canned)
- 1 cup Beef Broth (or vegetable broth)
- 8 oz Pasta (any shape)
- 1 tsp Italian Seasoning
- 1 cup Spinach (fresh)
- 1/2 cup Parmesan Cheese (grated)
Instructions
- Brown the ground beef in a large skillet over medium heat until fully cooked, about 5-7 minutes, draining any excess fat.
- Add the chopped onion and minced garlic to the pan. Cook for 3-4 minutes until the onion is translucent.
- Stir in the canned diced tomatoes, beef broth, and pasta. Bring to a boil to combine flavors.
- Cover and let it simmer over low heat for 10-12 minutes, stirring occasionally until the pasta is al dente.
- Add the Italian seasoning and fresh spinach, cooking just until the spinach wilts, about 2 minutes.
- Sprinkle the grated Parmesan cheese over the pasta and let it melt into the mixture before serving.
Notes
- Feel free to substitute ground turkey or chicken for a lighter option.
- You can add other vegetables, such as bell peppers or mushrooms, for added nutrition and flavor.
