Description

A delicious and easy Balsamic Chicken recipe, perfect for a weeknight dinner.


Ingredients

  • 46 boneless, skinless chicken breasts (1 inch thick)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • ¾ cup balsamic vinegar
  • 3 tablespoons honey
  • 1 ½ cups cherry or grape tomatoes (halved)
  • 8 ounces fresh mozzarella “pearls”
  • Fresh basil leaves to garnish

Instructions

  1. Preheat the oven to 350℉.
  2. Season the chicken breasts with salt and pepper.
  3. In a large cast-iron skillet, heat the olive oil over medium-high heat. Add the chicken breasts using tongs and cook for about 5-6 minutes on each side, or until they are no longer pink in the center. Remove the chicken from the skillet and set it aside.
  4. In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant.
  5. Pour in the balsamic vinegar and honey (if using). Stir well to combine and simmer for about 5 minutes or until the sauce thickens slightly.
  6. Return the cooked chicken breasts to the skillet and turn to coat with the sauce.
  7. Add the halved cherry tomatoes and the mozzarella pearls to the skillet.
  8. Place the skillet in the oven and cook for 5-10 minutes until the cheese melts. Alternatively, you can cover the skillet with a lid and let it simmer for 5 minutes or until the cheese is melted and bubbly.
  9. Serve the Balsamic Chicken hot, drizzling some of the tomato-balsamic sauce from the skillet over the top.

Notes

  • For a thicker sauce, simmer longer before adding chicken.
  • Serve with pasta or crusty bread to soak up the sauce.
