Description

Delicious mini cherry lattice tarts made with fresh or frozen cherries, perfect for any occasion.


Ingredients

  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 pre-made or homemade pie crust
  • 1 tablespoon butter (optional, for topping)
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. Prepare the Cherries: If using fresh cherries, wash and pit them. If using frozen cherries, make sure they are thawed. In a medium saucepan over medium heat, combine cherries, sugar, cornstarch, vanilla extract, and lemon juice. Stir and cook until the mixture thickens, about 5-7 minutes. Remove from heat and let it cool.
  2. Preheat Oven: Preheat your oven to 375°F (190°C).
  3. Prepare the Pie Crust: Roll out the pie crust to about 1/8-inch thickness on a floured surface. Use a round cutter or a small bowl to cut circles large enough to fit into your tart pans. Carefully press the dough circles into the tart pans.
  4. Assemble the Tarts: Spoon the cherry filling evenly into each prepared tart shell. Cut the remaining pie dough into thin strips for the lattice top. Arrange the strips over the tarts in a lattice pattern.
  5. Finish the Tarts: Dot each tart with a small piece of butter (optional). Beat the egg with the milk to create an egg wash. Brush this over the lattice crust for a golden finish.
  6. Bake: Place the tarts in the preheated oven and bake for 20-25 minutes, or until the crust is golden brown and the filling is bubbling.
  7. Cool and Serve: Allow the tarts to cool in the pans for at least 10 minutes before removing. Serve warm or at room temperature.
