- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
- 1 pre-made or homemade pie crust

- 1 egg (for egg wash)
- 1 tablespoon milk (for egg wash)
Instructions
- Prepare the Cherries: If using fresh cherries, wash and pit them. If using frozen cherries, make sure they are thawed. In a medium saucepan over medium heat, combine cherries, sugar, cornstarch, vanilla extract, and lemon juice. Stir and cook until the mixture thickens, about 5-7 minutes. Remove from heat and let it cool.
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare the Pie Crust: Roll out the pie crust to about 1/8-inch thickness on a floured surface. Use a round cutter or a small bowl to cut circles large enough to fit into your tart pans. Carefully press the dough circles into the tart pans.
- Assemble the Tarts: Spoon the cherry filling evenly into each prepared tart shell. Cut the remaining pie dough into thin strips for the lattice top. Arrange the strips over the tarts in a lattice pattern.
- Finish the Tarts: Dot each tart with a small piece of butter (optional). Beat the egg with the milk to create an egg wash. Brush this over the lattice crust for a golden finish.
- Bake: Place the tarts in the preheated oven and bake for 20-25 minutes, or until the crust is golden brown and the filling is bubbling.
- Cool and Serve: Allow the tarts to cool in the pans for at least 10 minutes before removing. Serve warm or at room temperature.

- Pie Crust: For a flakier crust, ensure your ingredients are cold before making the dough.
- Cherries: Taste the cherry filling before baking. If it is too tart, add a bit more sugar.
