Roasted Dutch Carrots with Maple Syrup

Description

These roasted Dutch carrots are sweetened with maple syrup and complemented by fresh thyme, creating a delicious side dish.


Ingredients

Scale
  • 2 bunches Dutch carrots
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 2 teaspoons fresh thyme leaves (approx.)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Pinch of cayenne pepper (to taste)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Wash the Dutch carrots and trim the green tops, leaving a little stem if you like. Slice any larger carrots in half lengthways so they cook evenly.
  3. In a large mixing bowl, whisk together the maple syrup, olive oil, thyme, salt, black pepper and cayenne pepper.
  4. Add the carrots to the bowl and toss to coat evenly.
  5. Transfer the carrots to a baking dish and pour over any remaining glaze.
  6. Roast for 30 minutes, turning halfway, until the carrots are tender and lightly caramelised.
  7. Serve warm, spooning over the glaze from the baking dish.

Notes

  • Ensure that the carrots are of similar size for even cooking.
  • Adjust the amount of cayenne pepper based on your spice preference.
