Delicious lemon cream bars with a buttery crust and a creamy lemon filling.
Ingredients

- 1½ cups crushed digestive biscuits or graham crackers
- ⅓ cup melted unsalted butter
- 2 tbsp granulated sugar
- 1 can (14 oz) sweetened condensed milk
- ½ cup fresh lemon juice
- 1 tbsp lemon zest
- 8 oz cream cheese, softened
- ½ tsp vanilla extract
- ½ cup lemon curd
- 1 tbsp warm water
- Crushed biscuits (garnish)
- Fresh lemon slices
- Fresh mint leaves
Instructions
- Prepare the crust: Combine crushed biscuits, melted butter, and sugar. Press firmly into a parchment-lined 8×8 pan. Bake at 175°C (350°F) for 8–10 minutes, then let cool.
- Make the lemon filling: Beat cream cheese until smooth. Add condensed milk, lemon juice, lemon zest, and vanilla. Mix until silky and lump-free. Spread evenly over the cooled crust.
- Chill to set: Refrigerate at least 4 hours, or overnight, until firm.
- Add glaze & garnish: Mix lemon curd with warm water until pourable. Spread gently over the chilled lemon layer. Decorate with crushed biscuits, lemon slices, and mint.
- Final chill & serve: Chill 15 minutes, slice into bars, and serve cold for peak creaminess.

- For best results, let the bars chill overnight.
