Description

A delightful layered cake featuring a soft vanilla sponge and rich vanilla custard, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 3 tbsp cornstarch
  • 4 large egg yolks
  • 2 tsp vanilla extract
  • 1 tbsp unsalted butter
  • Raspberry or strawberry jam (for layering)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9-inch round cake pan.
  2. In a mixing bowl, beat the eggs and sugar together until light and fluffy.
  3. Add in the vanilla extract and melted butter, mixing well.
  4. Sift together flour and baking powder. Add to the egg mixture alternately with milk, starting and ending with flour.
  5. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  6. Once baked, allow the cake to cool, then slice horizontally into three even layers.
  7. In a saucepan, bring milk to a simmer over medium heat.
  8. In a bowl, whisk together egg yolks, sugar, and cornstarch until smooth.
  9. Slowly pour the hot milk into the egg mixture, whisking constantly to prevent curdling.
  10. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened.
  11. Remove from heat and stir in vanilla extract and butter. Let it cool completely.
  12. Assemble the cake by placing one layer of sponge cake on a serving plate, spreading a layer of jam, then custard. Repeat with the second layer and finally top with the last sponge layer and dust with powdered sugar.

Notes

  • For a richer flavor, use a vanilla bean in the custard instead of extract.
  • Chill the custard before layering for better consistency.
  • Fresh berries can be added between layers for extra flavor.
  • Ensure the custard is cooled before assembling to prevent the cake layers from becoming soggy.
