- 2 ripe bananas (mashed)
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/3 cup granulated sugar
- 1/2 cup semi-sweet chocolate chips
- 1 large egg
- 1/4 cup unsalted butter (melted)
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a bowl, mash the ripe bananas until smooth.
- Mix in melted butter, sugar, egg, and vanilla extract until well combined.
- Sift in flour, baking powder, and salt; stir until just combined.
- Fold in chocolate chips gently.
- Spoon batter into muffin tin and bake for 18-20 minutes or until golden brown.
Notes
- Make sure bananas are very ripe for optimal sweetness.
- Can substitute butter with coconut oil for a dairy-free option.
