Description

A comforting one-pot cheesy beef pasta dish loaded with vegetables.


Ingredients

  • 1 lb lean ground beef
  • 8 oz pasta (penne or fusilli)
  • 1 cup diced bell peppers
  • 1 cup diced zucchini
  • 2 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • 15 oz canned diced tomatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 2 tsp Italian seasoning
  • to taste salt and pepper

Instructions

  1. Heat a large pot over medium heat and add olive oil. Sauté chopped onion and minced garlic until fragrant.
  2. Increase heat and add ground beef; cook until browned, breaking it apart (5-7 minutes).
  3. Stir in diced bell peppers and zucchini; cook for another 3-4 minutes.
  4. Add uncooked pasta, diced tomatoes, beef broth, Italian seasoning, salt, and pepper; stir well.
  5. Bring to a boil, reduce heat to low, cover, and simmer for 10-12 minutes or until pasta is tender.
  6. Stir in shredded cheddar cheese until melted and creamy.

Notes

  • Feel free to add other vegetables like mushrooms or carrots.
  • This dish can be made ahead and stored in the refrigerator for up to 3 days.
