A comforting one-pot cheesy beef pasta dish loaded with vegetables.
Ingredients

- 1 lb lean ground beef
- 8 oz pasta (penne or fusilli)
- 1 cup diced bell peppers
- 1 cup diced zucchini
- 2 cups fresh spinach
- 1 cup shredded cheddar cheese
- 15 oz canned diced tomatoes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 3 cups beef broth
- 2 tsp Italian seasoning
- to taste salt and pepper
Instructions
- Heat a large pot over medium heat and add olive oil. Sauté chopped onion and minced garlic until fragrant.
- Increase heat and add ground beef; cook until browned, breaking it apart (5-7 minutes).
- Stir in diced bell peppers and zucchini; cook for another 3-4 minutes.
- Add uncooked pasta, diced tomatoes, beef broth, Italian seasoning, salt, and pepper; stir well.
- Bring to a boil, reduce heat to low, cover, and simmer for 10-12 minutes or until pasta is tender.
- Stir in shredded cheddar cheese until melted and creamy.
Notes
- Feel free to add other vegetables like mushrooms or carrots.
- This dish can be made ahead and stored in the refrigerator for up to 3 days.
