- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1/2 cup freshly squeezed lemon juice
- 1/4 cup capers, rinsed
- 1 cup low-sodium chicken broth
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
- 2 tablespoons butter
- Pinch of sugar (optional)
- Salt and pepper to taste
Instructions
- Grease the crockpot with non-stick spray or olive oil.
- Season chicken breasts with salt and pepper.
- In a skillet over medium-high heat, add olive oil and sear chicken for 3-4 minutes on each side until golden brown.
- Add minced garlic to the skillet; cook until fragrant (about 30 seconds).
- Pour in lemon juice and chicken broth; scrape up brown bits from the skillet and simmer for 2-3 minutes.
- Transfer chicken to the crockpot, pour the broth mixture over it, and sprinkle capers on top.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
