Delicious chocolate almond macarons filled with ganache, perfect for any occasion.
Ingredients

- 1 cup almond flour (finely ground)
- 1/4 cup unsweetened cocoa powder
- 1 3/4 cups confectioners’ sugar
- 3 large egg whites (room temperature)
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter (for filling)
- 1/2 cup dark chocolate (for ganache filling)
- 1/4 cup heavy cream (for ganache filling)
Instructions
- Preheat your oven to 300°F (150°C). Line two baking sheets with parchment paper.
- Sift together almond flour, cocoa powder, and confectioners’ sugar in a bowl.
- In a clean mixing bowl, whip egg whites until foamy; gradually add granulated sugar until stiff peaks form.
- Gently fold the sifted dry mixture into the whipped egg whites until just combined.
- Transfer batter to a piping bag fitted with a round tip; pipe 1-inch circles on baking sheets.
- Let macarons rest at room temperature for about 30 minutes until they form a skin.
- Bake for 15-18 minutes; stir until smooth and let cool until firm.
- Pipe ganache onto half of the macaron shells and sandwich them with the remaining halves.
Notes
- Macarons can be stored in an airtight container for up to a week.
- Make sure egg whites are at room temperature for best results.
