A hearty beef stew topped with flaky biscuit dough, perfect for a comforting meal.

- 1½ lbs beef stew meat, cubed
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1½ cups diced potatoes
- 1 cup frozen peas
- 1 cup frozen corn
- 3 tablespoons flour
- 3 cups beef broth
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt & pepper to taste
- 1 can refrigerated biscuit dough (or homemade biscuits)
- 2 tablespoons melted butter (for brushing)
Instructions
- Heat olive oil in a deep skillet or Dutch oven. Sear beef until browned.
- Add onion, carrots, celery, and potatoes. Cook until slightly tender.
- Sprinkle in flour and stir until it coats everything. Slowly add beef broth, garlic powder, thyme, salt, and pepper. Simmer until thickened.
- Stir in frozen peas and corn. Transfer the filling to a 9×13 casserole dish.
- Arrange biscuit dough evenly on top. Brush with melted butter.
- Bake at 375°F for 20–25 minutes or until golden brown and bubbly.
