- 2 tbsp olive oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 ribs celery, chopped
- 2 large carrots, diced
- 4 cups vegetable broth
- 8 oz cream cheese
- 2 cups spinach, fresh
- 1 tsp seasoned salt

Instructions
- In a large pot, warm 2 tablespoons of olive oil over medium heat until shimmering.
- Add 1 diced onion and sauté for 3-4 minutes until translucent.
- Stir in 4 minced garlic cloves, 2 chopped celery ribs, and 2 diced carrots. Cook for another 5 minutes.
- Add 4 cups of vegetable broth. Bring to a gentle boil.
- Reduce heat and stir in 8 ounces of cream cheese. Mix until melted and creamy.
- Fold in 2 cups of fresh spinach, allowing it to wilt slightly.
- Sprinkle in 1 teaspoon of seasoned salt and add pepper to taste.
- Let the soup simmer for 10-15 minutes.
Notes
- This recipe can be easily adapted by using chicken broth instead of vegetable broth for a non-vegetarian version.
- Feel free to substitute zucchini for carrots for a lower-carb option.
