Ingredients

  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 ribs celery, chopped
  • 2 large carrots, diced
  • 4 cups vegetable broth
  • 8 oz cream cheese
  • 2 cups spinach, fresh
  • 1 tsp seasoned salt
  • to taste pepper

Instructions

  1. In a large pot, warm 2 tablespoons of olive oil over medium heat until shimmering.
  2. Add 1 diced onion and sauté for 3-4 minutes until translucent.
  3. Stir in 4 minced garlic cloves, 2 chopped celery ribs, and 2 diced carrots. Cook for another 5 minutes.
  4. Add 4 cups of vegetable broth. Bring to a gentle boil.
  5. Reduce heat and stir in 8 ounces of cream cheese. Mix until melted and creamy.
  6. Fold in 2 cups of fresh spinach, allowing it to wilt slightly.
  7. Sprinkle in 1 teaspoon of seasoned salt and add pepper to taste.
  8. Let the soup simmer for 10-15 minutes.

Notes

  • This recipe can be easily adapted by using chicken broth instead of vegetable broth for a non-vegetarian version.
