Ingredients
Scale
- 2 ripe avocados
- 1 cup pomegranate seeds
- 12 small tortilla cups
- 1 lime, juiced
- 2 tablespoons chopped fresh cilantro
- 1 small red onion, finely diced
- 1 small jalapeño, seeded and minced
- Salt and pepper to taste
Instructions
- Prepare the Guacamole: Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl. Add lime juice and mash the avocados with a fork until smooth. Stir in the chopped cilantro, diced red onion, and minced jalapeño. Season with salt and pepper to taste, mixing everything until well combined.
- Assemble the Tortilla Cups: Place the tortilla cups on a serving platter. Spoon a generous amount of the prepared guacamole into each tortilla cup.
- Add the Pomegranate Seeds: Sprinkle a tablespoon of pomegranate seeds over each guacamole-filled tortilla cup for a burst of sweetness and color.
- Garnish: Top each cup with a small cilantro leaf for added flavor and presentation.
Notes
- For extra flavor, consider adding a pinch of garlic powder to the guacamole.
- You can lightly toast the tortilla cups in the oven for a few minutes to make them crispy before adding the guacamole.
- If you like more heat, leave some seeds in the jalapeño or add a pinch of cayenne pepper to the guacamole.
- This recipe can be doubled or tripled for larger gatherings.
