Description

A delicious sautéed dish featuring fresh green beans and cremini mushrooms, perfect as a side dish.


Ingredients

  • 1 lb fresh green beans, trimmed
  • 8 oz cremini mushrooms, thickly sliced
  • 3 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp lemon zest (optional)

Instructions

  1. Wash and trim the green beans. Slice mushrooms and mince garlic.
  2. Bring a pot of salted water to a boil. Blanch green beans for 2-3 minutes until bright green, then transfer to an ice bath. Drain and pat dry.
  3. Heat olive oil and half the butter in a skillet over medium-high heat. Add mushrooms and cook undisturbed for 4-5 minutes until golden. Stir and cook until tender.
  4. Reduce heat to medium. Add garlic and remaining butter. Cook for 30 seconds until fragrant.
  5. Add the blanched green beans and toss everything together. Cook for another 2-3 minutes until fully coated and heated through.
  6. Season with salt, pepper, and lemon zest if using. Serve hot.
