Instructions
- Prepare the Berry Filling: In a medium saucepan, combine the mixed berries, granulated sugar, cornstarch, and lemon juice. Cook over medium heat until the mixture thickens and becomes bubbly. Stir continuously to avoid sticking. Once thickened, remove from heat and let the mixture cool to room temperature.
- Prepare the Puff Pastry: Thaw the puff pastry according to the package instructions (if frozen). Preheat the oven to 400°F (200°C). Roll out the pastry on a lightly floured surface to eliminate any creases or folds.
- Assemble the Pastries: Cut the puff pastry into rectangles or squares, about 4×4 inches each. Spoon a generous tablespoon of berry filling onto one half of each pastry piece, ensuring to leave a small border. Fold the pastry over the filling to form a pocket and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
- Apply Egg Wash and Bake: Beat the egg with water to create an egg wash. Brush the top of each pastry with the egg wash to promote a golden, shiny finish. Place the pastries on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until the pastries are puffed and golden brown.
- Cooling and Dusting: Remove from the oven and let cool on a wire rack. Dust with powdered sugar before serving.
