Description
Delicious smoked salmon and cucumber sandwiches perfect for a light lunch or appetizer.
Ingredients

- 1 large cucumber (thinly sliced)
- 4 slices white bread (crusts removed)
- 2 tablespoons cream cheese (softened)
- 1 tablespoon fresh dill (chopped)
- to taste salt
- 4 large eggs (hard-boiled and chopped)
- 2 tablespoons mayonnaise
- 1 teaspoon mustard
- 1 tablespoon chives (chopped)
- to taste salt
- to taste pepper
- 4 slices whole grain bread (crusts removed)
- 4 slices rye bread (crusts removed)
- 4 ounces smoked salmon
- 2 tablespoons cream cheese (softened)
- 1 tablespoon capers (drained)
- 1 tablespoon fresh lemon juice
Instructions
- In a mixing bowl, combine cream cheese, dill, and salt. Mix until smooth.
- Spread the cream cheese mixture on one side of each slice of bread.
- Layer cucumber slices on top of the cream cheese on two slices of bread.
- Top with the remaining slices of bread, cream cheese side down, and cut into quarters.
- In a mixing bowl, combine chopped eggs, mayonnaise, mustard, chives, salt, and pepper.
- Mix until well combined.
- Spread the egg salad mixture on one side of each slice of bread.
- Top with another slice of bread, crusts removed, and cut into quarters.
- Spread cream cheese on one side of each slice of rye bread.
- Layer smoked salmon on top of the cream cheese on two slices of bread.
- Add capers and drizzle with lemon juice.
- Top with the remaining slices of bread, cream cheese side down, and cut into quarters.
Notes
- Feel free to adjust seasoning according to taste.
- These sandwiches can be assembled a few hours in advance and stored in the refrigerator.
