Description

This decadent strawberry chocolate cheesecake combines creamy cheesecake filling with a refreshing strawberry swirl and a rich chocolate ganache, perfect for any occasion.

Ingredients

Scale
  • 1 ½ cups chocolate cookie crumbs
  • ¼ cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • ¼ cup sour cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 2 tablespoons sugar
  • ½ cup heavy cream
  • 4 oz semi-sweet chocolate, chopped
  • Fresh strawberries for garnish

Instructions

  1. Prepare the Crust:
    • Preheat the oven to 325°F (163°C).
    • Mix chocolate cookie crumbs and melted butter in a bowl.
    • Press the mixture into the bottom of a 9-inch springform pan. Chill in the freezer while preparing the filling.
  2. Prepare the Strawberry Swirl:
    • In a saucepan, combine strawberries and sugar.
    • Cook over medium heat until strawberries break down and mixture thickens, about 10 minutes.
    • Use a blender to purée the mixture. Set aside to cool.
  3. Prepare the Cheesecake Filling:
    • In a large bowl, beat softened cream cheese until smooth.
    • Add sugar, sour cream, and vanilla extract, and mix until well combined.
    • Beat in the eggs one at a time, mixing just until blended after each addition.
  4. Assemble the Cheesecake:
    • Pour the cheesecake filling over the chilled crust.
    • Drizzle strawberry purée over the filling and use a toothpick to swirl it gently.
    • Bake for 50-60 minutes, or until the center is just set and slightly jiggly.
  5. Prepare the Chocolate Ganache:
    • Heat heavy cream in a saucepan until just about to boil.
    • Pour over chopped chocolate in a heatproof bowl.
    • Let sit for 5 minutes, then stir until smooth and glossy.
    • Drizzle ganache in a swirl pattern over the baked cheesecake.
  6. Decorate and Chill:
    • Allow cheesecake to cool to room temperature.
    • Chill in the refrigerator for at least 4 hours or overnight.
    • Garnish with fresh strawberries before serving.

Notes

  • Ensure cream cheese is softened to avoid lumps in the filling.
  • For a firmer cheesecake, let it chill longer.
  • Use a knife dipped in hot water for clean slices.
  • Experiment with topping designs using ganache and strawberry purée for an artistic touch.
