Instructions

- Add sugar, sour cream, and vanilla extract, and mix until well combined.
- Beat in the eggs one at a time, mixing just until blended after each addition.
- Assemble the Cheesecake:
- Pour the cheesecake filling over the chilled crust.
- Drizzle strawberry purée over the filling and use a toothpick to swirl it gently.
- Bake for 50-60 minutes, or until the center is just set and slightly jiggly.
- Prepare the Chocolate Ganache:
- Heat heavy cream in a saucepan until just about to boil.
- Pour over chopped chocolate in a heatproof bowl.
- Let sit for 5 minutes, then stir until smooth and glossy.
- Drizzle ganache in a swirl pattern over the baked cheesecake.
- Decorate and Chill:
- Allow cheesecake to cool to room temperature.
- Chill in the refrigerator for at least 4 hours or overnight.
- Garnish with fresh strawberries before serving.
