Ingredients

  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Prepare the Crust: Preheat the oven to 325°F (163°C). Mix together the chocolate cookie crumbs, sugar, and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
  2. Make the Raspberry Swirl: In a small saucepan over medium heat, combine raspberries, sugar, and lemon juice. Cook until the mixture is soft and syrupy, about 5 minutes. Strain the sauce through a fine sieve to remove seeds. Set aside and let cool.
  3. Prepare the Cream Cheese Layer: In a large bowl, beat the cream cheese until smooth. Add the sugar and vanilla extract, mixing until combined. Add the eggs one at a time, beating well after each addition. Blend in the sour cream until the mixture is smooth.
  4. Assemble the Cheesecake: Pour half of the cream cheese mixture over the crust. Spoon half of the raspberry sauce over the batter and use a knife to swirl. Add the remaining cream cheese mixture, followed by the remaining raspberry sauce. Swirl again.
  5. Bake the Cheesecake: Place the springform pan into a larger pan filled with hot water halfway up the sides. Bake for 1 hour or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool inside with the door ajar for an hour. Refrigerate for at least 4 hours or overnight.
  6. Prepare the Topping: Whip the heavy cream and powdered sugar until stiff peaks form. Pipe or spread the whipped cream over the chilled cheesecake. Garnish with white chocolate shavings, if desired.
