Instructions

  1. Prepare the Filling:
    • Heat 1 cup of heavy cream in a saucepan until simmering.
    • Pour over white chocolate chips in a bowl. Let sit for 2 minutes and stir until smooth.
    • Refrigerate until thickened, about 1 hour.
  2. Make the Cupcakes:
    • Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
    • In a large bowl, sift together flour, sugar, cocoa powder, baking soda, and salt.
    • Add softened butter, eggs, vanilla, and buttermilk. Beat until smooth.
    • Fill cupcake liners 2/3 full with batter.
    • Bake for 18-20 minutes or until a toothpick comes out clean. Cool completely.

    • Stir until melted and smooth. Let cool slightly.
  5. Decorate the Cupcakes:
    • Spoon or pour ganache over each cupcake, letting it drip down the sides.
    • Sprinkle chocolate sprinkles over the ganache and top with chocolate chunks.
