- 1/2 cup caramel sauce
- 1/2 cup heavy cream
- 1/4 cup chopped pecans or walnuts
- 1/4 cup additional caramel sauce, for drizzling
- 1/4 cup additional chocolate chips, for topping
Instructions
- Preheat Oven: Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
- Prepare Crust: Combine chocolate cookie crumbs and melted butter in a mixing bowl. Press the mixture evenly into the bottom of the prepared pan. Chill while preparing the filling.
- Make Cheesecake Filling: In a large bowl, beat the softened cream cheese until smooth. Add sugar and vanilla extract, beating until well combined. Mix in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Stir in sour cream until smooth.
- Assemble Cheesecake: Pour half of the cheesecake batter over the crust, spreading evenly. Drizzle with half of the caramel sauce and half of the melted chocolate. Pour the remaining cheesecake batter on top, smoothing the surface.
- Bake: Place the cheesecake in the preheated oven and bake for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about an hour.
- Add Toppings: Remove cheesecake from the oven and run a knife around the edge to loosen it from the sides of the pan. Let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Garnish: Before serving, drizzle the top with additional caramel sauce and melted chocolate. Sprinkle chopped nuts and additional chocolate chips over the top.

- Ensure cream cheese is completely softened before mixing to avoid lumps.
- For extra crunch, bake the crust for 10 minutes at 350°F before adding the filling.
