Description

A delicious and hearty slow cooker soup featuring cheese tortellini, Italian sausage, and fresh vegetables.


Ingredients

Scale
  • 16 ounces Italian sausage
  • 1/2 medium onion (chopped)
  • 2 carrots (sliced)
  • 2 celery sticks (chopped)
  • 4 cloves garlic (minced)
  • 28 ounces crushed tomatoes
  • 14 ounces diced tomatoes (with juice)
  • 4 cups chicken broth
  • 2 (9 ounce) packages of cheese tortellini
  • 3/4 cup heavy whipping cream
  • 2 cups baby spinach
  • 1/2 teaspoon salt and pepper

Instructions

  1. Add the sausage and onions to a medium sized pan, cook the sausage and onions until the sausage is fully cooked. Add in the garlic towards the end. (so it doesn’t burn)
  2. Add the sausage mixture to the 8 quart slow cooker.
  3. Add your chopped carrots and celery to the slow cooker.
  4. Add the crushed tomatoes, diced tomatoes with juice and chicken broth.
  5. Close the lid and cook for 4 hours and 30 minutes. (Set to High for 3-4 hours – set to Low for 7-8 hours).
  6. If you cook on low heat, change the setting to high when you add the tortellini in.
  7. 30 minutes before done add in the cheese tortellini, heavy whipping cream, spinach, salt and pepper and stir.
  8. Once done, serve and enjoy! Top with more pepper and parmesan. (Optional)

Notes

  • This soup can be topped with additional parmesan cheese for extra flavor.
  • Adjust the cooking time as necessary depending on the heat setting you choose.
