Description

This is a delicious and creamy coconut custard pie, perfect for any occasion!

Ingredients

Scale
  • 1 pre-made pie crust (or homemade if preferred)
  • 1 can (14 oz) coconut milk
  • 1 cup whole milk
  • 1 cup coconut flakes (sweetened or unsweetened, depending on preference)
  • ¾ cup sugar
  • ¼ cup cornstarch
  • ¼ teaspoon salt
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • Toasted coconut flakes, for garnish

Instructions

  1. Preheat the Oven: Start by preheating your oven to 350°F (175°C).
  2. Prepare the Crust:
    • Roll out the pie crust and fit it into a 9-inch pie pan.
    • Trim excess edges and crimp if desired.
    • Line the crust with parchment paper and fill with pie weights or dried beans.
    • Bake for about 15 minutes or until the edges are golden.
    • Remove weights and parchment, then bake for another 5 minutes to firm the bottom.
    • Let it cool on a rack.
  3. Make the Custard Filling:
    • In a medium saucepan, combine coconut milk and whole milk.
    • Add sugar, cornstarch, and salt. Whisk until smooth.
    • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil.
    • Beat the egg yolks in a separate bowl. Slowly whisk in a small amount of the hot milk mixture to temper the yolks.
    • Gradually add the egg yolk mixture back to the saucepan, whisking continuously.
    • Continue to cook until the custard is thick and creamy.
    • Remove from heat and stir in butter and vanilla extract.
    • Fold in coconut flakes.
  4. Assemble the Pie:
    • Pour the custard into the cooled pie crust.
    • Smooth the top with a spatula.
  5. Chill the Pie: Refrigerate the pie for at least 4 hours or until set.
  6. Garnish: Sprinkle toasted coconut flakes over the pie before serving.

Notes

  • Pie Weight Substitution: If you don’t have pie weights, dried beans or rice can be used.
  • Coconut Flavor: For a more intense coconut flavor, use coconut extract instead of vanilla.
  • Toasting Coconut Flakes: Lightly toast coconut flakes in a dry skillet over medium heat until golden brown for added flavor.
  • Serving Suggestion: Serve chilled with a dollop of whipped cream for extra indulgence.
