- 1 pre-made pie crust (or homemade if preferred)
- 1 can (14 oz) coconut milk
- 1 cup whole milk
- 1 cup coconut flakes (sweetened or unsweetened, depending on preference)
- ¾ cup sugar
- ¼ cup cornstarch
- ¼ teaspoon salt
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- Toasted coconut flakes, for garnish
Instructions
- Preheat the Oven: Start by preheating your oven to 350°F (175°C).
- Prepare the Crust:
- Roll out the pie crust and fit it into a 9-inch pie pan.
- Trim excess edges and crimp if desired.
- Line the crust with parchment paper and fill with pie weights or dried beans.
- Bake for about 15 minutes or until the edges are golden.
- Remove weights and parchment, then bake for another 5 minutes to firm the bottom.
- Let it cool on a rack.
- Make the Custard Filling:
- In a medium saucepan, combine coconut milk and whole milk.
- Add sugar, cornstarch, and salt. Whisk until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil.
- Beat the egg yolks in a separate bowl. Slowly whisk in a small amount of the hot milk mixture to temper the yolks.
- Gradually add the egg yolk mixture back to the saucepan, whisking continuously.
- Continue to cook until the custard is thick and creamy.
- Remove from heat and stir in butter and vanilla extract.
- Fold in coconut flakes.
- Assemble the Pie:
- Pour the custard into the cooled pie crust.
- Smooth the top with a spatula.
- Chill the Pie: Refrigerate the pie for at least 4 hours or until set.
- Garnish: Sprinkle toasted coconut flakes over the pie before serving.
Notes
- Pie Weight Substitution: If you don’t have pie weights, dried beans or rice can be used.
- Coconut Flavor: For a more intense coconut flavor, use coconut extract instead of vanilla.
- Toasting Coconut Flakes: Lightly toast coconut flakes in a dry skillet over medium heat until golden brown for added flavor.
