Ingredients

  • 1 tablespoon instant yeast
  • 1 egg
  • 30 g unsalted butter, softened
  • 30 g granulated sugar
  • 1/2 teaspoon salt
  • 250 g all-purpose flour
  • 45 g unsalted butter, softened (for filling)
  • 50 g brown sugar
  • 1 tablespoon ground cinnamon
  • 6 crushed chocolate sandwich cookies
  • 100 g cream cheese, softened (for frosting)
  • 30 g unsalted butter, softened (for frosting)
  • 50 g powdered sugar
  • 1/2 teaspoon vanilla extract
  • 4 crushed chocolate sandwich cookies (for topping)

Instructions

  1. Make the Dough: Start by warming the milk until it’s just warm to the touch—not hot. In a large mixing bowl, combine the milk and instant yeast. Let it sit for 5 minutes until slightly foamy. Add the egg, softened butter, sugar, and salt. Mix well. Gradually add the flour and mix until a soft dough forms. Knead the dough for 5-7 minutes on a floured surface or using a dough hook, until it’s smooth and elastic. Cover the dough with a towel and let it rise in a warm place for 1 to 1 hours, or until doubled in size.
  2. Prepare the Filling: While the dough is rising, combine the softened butter, brown sugar, and cinnamon in a bowl. Crush the chocolate sandwich cookies and set aside.
  3. Assemble the Rolls: Once the dough has doubled in size, roll it out into a rectangle about ¼ inch thick. Spread the cinnamon-sugar butter mixture evenly across the surface, then sprinkle the crushed cookies generously over the top. Carefully roll the dough up from the long edge into a tight log. Slice into 8 even rolls and place them into a greased baking dish.
  4. Second Rise: Cover the rolls loosely with a towel and let them rise again for about 30 minutes. They should puff up slightly.
  5. Bake: Preheat your oven to 180°C (350°F). Bake the rolls for 20–25 minutes, or until golden and cooked through.
  6. Make the Frosting: While the rolls are baking, prepare the frosting. In a bowl, beat together cream cheese, butter, powdered sugar, and vanilla extract until smooth and fluffy. Once the rolls come out of the oven, let them cool for 10 minutes before spreading the frosting on top. Sprinkle the remaining crushed cookies over the frosting.
