Description
A refreshing, creamy dessert made with full-fat coconut milk and fresh orange juice and zest.
Ingredients
Scale
- 1 can full-fat coconut milk
- 2 fresh oranges (juice and zest)
- 1/2 cup granulated sugar or maple syrup
- 2 tablespoons gelatin powder or agar-agar powder
- 1 teaspoon vanilla extract
- Optional garnish: toasted coconut flakes, fresh orange segments, fresh mint
Instructions
- Prepare Your Oranges: Thoroughly wash the oranges and zest them using a fine grater or microplane, avoiding the bitter white pith. Halve the oranges and juice them, straining out any pulp or seeds to get about 1/2 cup of fresh orange juice.
- Bloom the Gelatin (or Prepare Agar-Agar): In a small bowl, sprinkle the gelatin powder over 2 tablespoons of the cold orange juice and let it sit for 5 minutes to bloom. If using agar-agar, skip this step and prepare it in step 3.
- Combine and Gently Heat the Base: In a medium saucepan, combine the full-fat coconut milk, remaining fresh orange juice, granulated sugar (or maple syrup/agave nectar), and orange zest. Heat over medium-low, whisking continuously until the sugar is dissolved and the mixture is warm.
- Dissolve the Gelling Agent: Remove the saucepan from heat and add the bloomed gelatin, whisking until completely dissolved. If using agar-agar, add it now and simmer for 2-3 minutes, whisking to ensure it’s fully dissolved.
- Add Vanilla and Strain (Optional but Recommended): Stir in the vanilla extract and pour the mixture through a fine-mesh sieve into a clean bowl or measuring cup to remove any bits of zest or undissolved gelatin.
- Portion and Chill: Pour the mixture into individual serving glasses or a larger bowl. Chill in the refrigerator for at least 3-4 hours, or preferably overnight, until fully set.
- Garnish and Serve: Once set, garnish with toasted coconut flakes, fresh orange segments, or mint before serving. Enjoy your refreshing, creamy dessert!
Notes
- Ensure the orange zest is finely grated to avoid bitterness.
- For a vegan option, use agar-agar instead of gelatin.
- Chill the panna cotta overnight for best results.
