Description

A delicious one-pot meal featuring kielbasa sausage and penne pasta in a creamy broth.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound kielbasa sausage, sliced
  • ½ cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 2 cups reduced-sodium chicken broth
  • 14 ounce can diced Italian tomatoes
  • ½ cup milk
  • 8 ounces uncooked penne or similar pasta
  • ½ teaspoon ground black pepper
  • 2 cups shredded Cheddar-Jack cheese

Instructions

  1. Add olive oil to a large skillet over medium heat.
  2. Add the kielbasa and onion, and cook, stirring regularly, for 4 minutes, or until the sausage is lightly browned.
  3. Stir in the garlic and Italian seasoning, and cook for 30 seconds, stirring the entire time.
  4. Add chicken broth, tomatoes, milk, pasta, and black pepper.
  5. Bring to a boil.
  6. Once at a boil, lower the heat to medium-low. Cover and cook for 15 minutes, or until the pasta is al dente, stirring occasionally.
  7. Remove from heat.
  8. Add the cheese, and stir until melted and combined.
  9. Season with additional salt and pepper to taste.
