Description
A fresh and vibrant appetizer featuring ripe tomatoes and basil served on toasted baguette slices.
Ingredients

- 4 tomatoes (Roma, ripe and coarsely chopped)
- 1/4 cup sweet onion (finely chopped)
- 1/4 cup basil (lightly packed and chopped)
- 1 – 2 clove garlic (finely minced)
- 1 Tablespoon olive oil
- 12–15 slices baguette (or French bread)
Instructions
- Slice baguette into 12-15 pieces, about 1/2 inch thick.
- Toast slices in a 400ºF oven for 5-7 minutes until starting to crisp and become golden.
- After the tomatoes are seeded and chopped, let them sit for about 5 minutes and drain the liquid.
- In a bowl, mix diced tomatoes, minced garlic, chopped basil, olive oil, and a pinch of salt. Add parmesan if using. Stir gently to combine.
- Spoon the tomato mixture onto each toasted baguette slice right before serving to prevent sogginess.
- Serve immediately. Garnish with additional basil if desired.
Notes
- This dish is best served fresh to maintain its crunch.
- Use heritage tomatoes in summer for the best flavor.
- Parmesan can be added for extra richness.
