Instructions

  1. Prepare Dry Ingredients: Sift together the powdered sugar and almond flour into a large bowl. Repeat to ensure no lumps remain.
  2. Beat Egg Whites: In a clean, dry bowl, beat the egg whites with an electric mixer until they start to froth. Add cream of tartar and continue beating until soft peaks form. Gradually add granulated sugar, continuing to beat until stiff peaks form. Gently fold in vanilla extract and food coloring if desired.
  3. Combine Mixtures: Slowly fold the dry ingredients into the egg whites. Mix until smooth and shiny.
  4. Pipe the Macarons: Transfer the batter to a piping bag fitted with a round tip. Pipe small circles onto a baking sheet lined with parchment paper. Lightly tap the baking sheet to release air bubbles. Let the macarons sit at room temperature until a skin forms on the surface (about 30 minutes).
  5. Bake: Preheat oven to 300°F (150°C). Bake for 15-18 minutes. Allow to cool completely on the baking sheet.
  6. Whip the Cream: In a bowl, whisk the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  7. Assemble: Pair macaron shells of similar size. Pipe a dollop of whipped cream onto one shell. Gently sandwich with another shell. Top with a swirl of whipped cream and place a fresh blueberry on top.
